If you want to win your neighborhood Christmas cookie contest, these cookies will do just that! This recipe won the unofficial 2024 Sunnyland Christmas Cookie Contest, with the prize being a mini plastic trophy and a $25 AMC giftcard!
Rich chocolate flavor with just the right amount of peppermint makes them super festive and unique compared to the usual frosted sugar cookie. They are actually a spin-off of the original receipe that includes a Rolo candy in the center and powdered sugar topping. Enjoy!
Ingredients
1 box Devil's Food cake mix
1/3 cup vegetable oil
2 eggs
Mini peppermint patties
Finely crushed peppermint
Directions
Preheat oven to 350°F.
Mix the cake mix, oil, and eggs until it is fully incorporated.
Form a ball of the mix around one peppermint pattie.
Space the cookies out evenly on an ungreased cookie sheet and bake for 7-8 minutes.
Once the cookies are done baking, move them to a cooling rack and sprinkle with the finely crushed peppermint.
Recommendations
Sprinkling the crushed peppermint onto the cookies when they are warm will help it stick better. However, if they are too warm, the peppermint will melt and get somewhat sticky. I asked my favorite AI chatbot how to fix this and here's some other methods that you could try:
Freeze the crushed peppermint first which will keep it from melting before the cookies cool
Use a coarse crushed peppermint which is less likely to melt
Cool the cookies quickly to reduce the time the peppermint has to melt
Add a light dusting of powdered sugar before the crushed peppermint to provide a barrier between the warm cookie and the peppermint
